Blueberry pancakes

Being a mom in this modern era is not an easy job. You are busy and distracted , store shelves offer too many long life apparently healthy options and your kids are picky eaters. Out of all the meals, I find breakfast most challenging. Kids are usually drowsy and short of time too, hence breakfast cereal seems like an easy option. And I do let them take it once in a while ( trader joe’s healthy one please ) But most of the time I try to come up with innovative recipes of pancakes, waffles and French toast. Unfortunately, they prefer savory choices on weekends only , leaving me battle with sweet yet healthy options. I mostly try to sweeten these with either fruits like banana, apple and berries or i would use honey as my topping. Both work fine and kids love these options. And that one pump of whipped cream doesn’t hit much too 😂 Today as I opened the refrigerator to take out eggs, I looked at blueberry yoghurt and instantly a recipe popped up. These are the aha moments of a sahm and oh boy, im so proud of these little precious moments. Soon my 3 birds will fly away and i would sit back and read these blogs and smile. Coming back to recipe, here you go

Ingredients: Eggs: 3 ( 2 would be fine too) While flour/ almond flour can be used too :3/4 cup Rolled oats : 1/2 cup Blueberry yoghurt ( plain yoghurt will be fine) 1 cup Milk : 1/2 cup Baking powder: 1 tea spoon Blueberry: 1 /2 cup or as desired Method: Mix eggs, flour, oats and milk. Add yoghurt, blueberry and baking powder. Pour 1/4 cup batter in the buttered pan and cook until golden, flip and cook the other side. Serve with whipped cream and honey or maple syrup. P:S: I try to overdo with eggs as that’s my chance to stuff my girls in the morning. One egg should be fine too.
