Try Something New For Suhoor

Ramadan brings so many blessings. It’s the month of mercy, time to spread goodness, do charity, have those long sujood in qayam and finally indulge in traditional yummy food. In our household Ramadan is marked by long taraweeh nights and the aroma of food. Often times, I find myself searching for innovative recipes that are guaranteed to fill you up. In this blog post I have added a few dishes that you should try in sahoor/ sehri. I will be adding iftar addition next.

When it comes to sahoor we like to stick to classics that we learned through the Egyptians. Foul, hummus, feta and tzatziki dip with yogurt drink guaranteed to keep us full for a whole day.

For a simple addition to Sahoor Chobani yogurt is our family favorite. I fill these glasses with granola and nuts and kids love these. Try these or plain Greek yogurt bowl's at sahoor with cardamom tea and you will not be thirsty Insha Allah.

Foul/ Egyptian Fava Beans

Guaranteed to keep you full for the day. Check out the recipe below

Ingredients:

foul fava beans one can /2 cups boiled fava beans

Salt

1/3 cup chopped flat-leaf parsley

Extra-virgin olive oil

3 lemons, quartered

Salt and pepper

4–6 cloves garlic, crushed

Chili-pepper flakes

Method:

Soak the beans in water overnight. Cook on low flame for at least

two hours. reduce the liquid and mash them a little. add the spices and salt. Serve them in the bowl and let everyone pour olive oil, lemon and parsley. Serve with Arabic bread. If you are using can then just make it hot and serve as it has all the spices.

Oatmeal with chia seeds, berries and nuts is always a good idea. It’s very filling and keep you going for the long hectic day. Scroll down for the recipe:

Oatmeal cups

Ingredients:

Oats : 1 cup

Milk: half litre

Coconut: 3 tablespoon or more

Maple syrup or honey : 3 tablespoon

Vanilla powder: 1 teaspoon

Strawberry/ blueberry/ white chocolate chips/ nuts for garnishing

Cook milk with oats, sugar and coconut on low flame until its a bit thick. Add maple syrup and vanilla. Dish it out and garnish.

Tip: You can set the glasses and leave overnight in refrigerator too.

Pancakes are another filling option for sahoor. I have a couple of recipes below :

Apple pancakes

Pancakes Batter 1 cups flour

½ cup oat meal 1 tbsp brown sugar

¼ cup honey

½ cup cream cheese or yogurt 1/2 tsp salt 1 1/2 tsp baking powder 1/2 tsp cinnamon 2 egg 1 cup milk 2 tbsp butter

1 cup apple, peeled and grated

Method:

In a bowl, mix flour, oatmeal, cream cheese/yoghurt, honey with sugar, baking powder, salt and cinnamon. Add egg, milk and oil. Mix until smooth. Peel and grate the apple and combine with pancake batter. Heat a nonstick pan over medium high heat. For each pancake, pour 1/4 cupful batter onto hot pan. Flip and cook on the other side until golden brown. Serve with whipped cream and maple syrup.

Banana pancakes

Pancakes Batter 1 cups oat meal

½ cup almond meal

½ cup flour

¼ cup honey 1/2 tsp salt 1 1/2 tsp baking powder 1/2 tsp cinnamon 2 egg 1 cup milk 2 tbsp butte

¼ cup chocolate chip

2 bananas mashed

Method:

In a bowl, mix all dry ingredients ( except for chocolate chips), eggs honey, milk and banana. Add oil. Mix until smooth. Heat a nonstick pan over medium high heat. For each pancake, pour 1/4 cupful batter onto hot pan. Flip and add chocolate chip cook on the other side until golden brown. Serve with whipped cream and maple syrup.

Tortilla pockets

Ingredients:

½ cup Philadelphia garden cheese spread or plain cheese

½ cup Cheddar and mozzarella

4 Egg omelette of your choice

¼ cup Sour cream

1 tablespoon Sweet chili sauce

Method:

Make omelette with your choice of stuffing like mushroom, bell peppers, smoked turkey cold cut and mozzarella, cheddar. Set aside. Heat tortilla on griddle, spread cheese, omelette, sour cream and chili sauce. Fold it. In a frying pan add little oil and place tortilla, further fold it in square (i take it out from pan to fold as its too hot ) flip the side until done.

Shakshuka ( my version)


Ingredients:

6 eggs

1/2 cup slices tomatoes

1/2 cup bell pepper

1/2 cup mushrroms

1/2 cup baby spinach ( optional)

1 table spoon balsamic vinegar

1 table spoon Florentine sauce

2 table spoon oil

red pepper flakes as desired

black pepper as desired

salt as desired

Method:

saute tomatoes, add garlic powder and dries parsley. Later add all veggies and balsamic vinegar. Add salt and pepper.

lastly add eggs one by one and let it simmer on low heat until done. Garnish with dries or fresh parsley.

Creme Brulee Toast

Ingredients:

White toast/ baguette 8 slices

Eggs 5

Half and half or whole fat milk 300 ml ( one and half cup)

Brown sugar ( 5 table spoon or more if you like) + 1 table spoon for sprinkle

Butter half cup melted

Cookie butter ( 4 table spoon)

Cinnamon 1 tea spoon

Vanilla 1 teaspoon

Method:

Melt butter and pour it on the baking dish.

Sprinkle cinnamon and brown sugar on the melted butter.

Spread cookie butter in the toast and make a sandwich.

Arrange cookie butter stuffed toast in the same baking dish.

In a bowl mix eggs, brown sugar, vanilla and milk.

Pour over the bread. Cover and chill at least 8 hours or over night.

Preheat oven to 350 degrees.

Remove the dish from refrigerator.

Bake covered in aluminum foil for 20 minutes and later uncover it and bake for another 25-30 minutes until puffed and lightly browned.

Crispy Bhindi

Recipe:

Ingredients

Bhindi

Green chilli

Salt

Black pepper

Coriander powder

Method:

Cut bhindi in 4 strips. In a wok add oil (fir deep frying) add chilies let it turn brown. Add bhindi ans keep frying until it turns golden. Sprinkle salt, pepper and coriander. Serve hot.
