3 Easy Iftar Recipes



Ramadan kareem ☪️ May this Ramadan brings khair and barakat for all of us. In today’s blog, I am sharing three of my quick and easy recipes for iftar time. Every year, my target is to spend less time in the kitchen and more in ibada. That’s why I try to come up with quick recipes.

Chicken tikka Puff pastry

Ingredients:

Chicken tikka chunks : one cup

Square puff Pastry sheets: 8

Shredded Cheddar cheese: 1/2 cup

Egg : 1/4 for egg wash only

Method:

Keep the frozen puff pastry on the kitchen counter top and let thaw for a couple of hours.


Take pastry sheet, place tikka chunks and cheese and fold the pastry.

Beat the egg in a small bowl.

Dip a pastry brush in the beaten egg and spread over the pastry squares.

Preheat the oven to 400 F.

Place the puff pastry on a baking sheet lined with parchment paper.

Keep on the middle rack in the oven and bake for 20 to 25 minutes or till the puff pastry has turned crispy and golden in colour.


Chicken tikka chunks


I make these in bulk and freeze for sandwiches/ pastries etc

Ingredients:

Bone less chicken: 500 gm

Shan chicken tikka masala: 2 tablespoon

Red chili powder: 1 teaspoon

Cumin powder: 1 teaspoon

Coriander powder: 1tablespoon

Lemon juice: 2 tablespoon

Oil: 2 tablespoon


Method:

Marinate chicken with all ingredients. Leave it in refrigerator overnight or Atleast 2 hours.

In a pan add oil a d sauté chicken until little brown. Cook it on low flame until its tender but moist.


Smoked effect: (optional)


Take a burning charcoal in a steel bowl and place in the pot. Now pour some oil over the burning charcoal. Once the smoke starts rising, cover and seal for 5 minutes.


Chicken spring rolls


Spring rolls wrappers: 20 frozen

Boiled and shredded chicken: 300 gm

Noodle: boiled 1 cup

cabbage: 1 cup shredded

Carrot: 1/2 cup Julian cut

Green onion: chopped 1/2 cup

Soya sauce: 1 tablespoon

Oyster sauce: 2 tablespoon (optional)

Sweet chili sauce: 1 tablespoon

Ketchup: 1 tablespoon

Sesame oil: 1 tablespoon

Any oil of your choice: 1 tablespoon

Flour: 1/2 cup

Water: 1/4 cup


Method:

Take out wrappers from freezer and let it thaw.

In a small bowl mix flour and water.

In a pan add half oil and saute chicken and gradually add noodles, sauces and vegetables.

You can stir fry each separately too.


Take one wrap at a time and spread flour mixture on the corners. Add one tablespoon of chicken filling to spring roll and fold it.


Hot and spicy drumsticks


Ingredients:

Drumsticks: 500 gm

Shaan chicken tikka masala: 2 tablespoon

Honey or brown sugar: 3 tablespoon

Sweet chilli sauce: 1/4 cup

Ketchup: 2 tablespoon


Method:

Mix all the ingredients and marinate chicken for two hours to overnight. Bake it for an hour. Dont dry the marinade completely. Dish out and pour marimade over the chicken. Enjoy :)
