Gluten free pancakes




Pan cakes are our family favorite. As much as I like the fluffy white flour pancakes, i always try to replace the white flour with healthier options. This gluten free stack of pancakes is really yummy and soft as well. And then its guilt free as it doesn’t have white sugar. We belong to the group that doesn’t believe in counting the calories rather we like to opt for healthier substitutes. The calories you get from white refined sugar are not the same you get from organic honey for instance. The latter has many health benefits if taken in controlled quantities.

So, here is my gluten free pancake recipe.

Ingredients:

One cup : almond flour

Half cup: gf oat flour

Half cup: gf oats

3 Eggs

3/4 cup milk ( almond milk or full cream milk)

1/4cup: oragnic maple syrup or organic honey or according to your taste

1 teaspoon instant coffee

1/4 cup gf chocolate granola cereal

1 teaspoon vanilla powder

1/4 teaspoon salt

1/2 teaspoon baking soda

1 tablespoon melted butter

Method:

In a large bowl whisk the eggs, milk and melted butter. Gradually add all ingredients.

Scoop the batter into a 1/4 cup measuring cup and pour it onto a greased griddle or pan for each pancake.

Cook the pancakes until the batter starts to bubble a little and the pancakes start to puff. Flip/turn over the pancakes and cook the pancakes until they are golden brown.

Serve with maple syrup and some fresh berries.
