Chicken Masala Roast

Chicken chargha/ tikka and roast are all traditionally popular dishes in sub continent. Our party food literally revolved around these variations. As much as i love both tikka chicken and chargha ; i would love to add some extra gravy that blends well with the roast chicken. So here is my attempt..enjoy :)

Ingredients:
Chicken : 1 whole without skin
Shan tikka masala : 4 table spoon or as per your taste
lemon : 2 medium lemon's juice
onion : one medium chopped
Tomatoes : two medium chopped
Tomato paste : 2 table spoon
ginger garlic paste : 1 table spoon
salt : as per your taste
oil : 1/4 cup or less
Method :
Marinate skin less whole chicken with shan masala and lemon and leave in refrigerator over night.
Heat oil in wok and add onion. fry onion till they become slightly golden, now add ginger garlic paste and tomatoes and fry till the mixture is roasted and oil becomes separate. Add tomato paste and check the colour, it should be bright red. time to add chicken and cover the wok, reduce heat to low flame. let it cook in its own juices. Once chicken is tender and oil is separated. Turn off the flame and smoke chicken with coal. Your masala roast chicken is ready :)
How to smoke chicken with coal
you will need
1 small piece (about 2 inches) of natural lump charcoal
gas burner
small glass bowl or old piece of bread or dried toast
oil to pour
Method :
Place the piece of charcoal directly on top of a gas burner. Burn the charcoal directly over the flames, turning the charcoal around using long tongs. Once its ready place the in the bowl or at the piece of bread (be careful the ashes should not spread around and that is why i have found glass bowls better ) now pour the oil and cover the wok.
